see . . . nobuddy is ever too old
to learn a new trick or two. lol.
6 (5 inch) flour tortillas
3 tbsp butter, melted
salsa (whatever yer flavorite kind. for me, the chunkyer the better)
black beans (i jest used the canned kind, drained in a colander)
green onion, chopped (however much to yer liking)
cracked black pepper
garlic powder
fresh cilantro, chopped
pepper jack cheese, shredded or chunked
6 eggs
sour cream
special equipment: 6 cup large muffin tin (ifn ya jest has the regular sized 12 count tin, trim off some of the edges of the tortillas so that they stays put).
heat oven to 350 degrees.
spray each muffin tin cup with butter cooking spray.
brush both sides of the tortillas lightly with the melted butter.
press the tortillas into the muffin tin creatin little tortilla cups.
spoon a heapin tablespoon of salsa into each tortilla cup
n then a heapin tablespoon of black beans
n then sprinkle each serving with chopped green onion n cracked black pepper n garlic powder n chopped fresh cilantro.
top with the pepper jack cheese
n then crack an egg into each of the six cups.
bake until eggs are set, about 12 minutes (i likes them yolks all runny).
note: ifn the tortillas are a gettin a lil bit too browned too fast, cover lightly with aluminum foil.
to serve, spoon a dollup of sour cream n place a sprig of fresh cilantro on top of the eggs
n yer guests will think that you has jest made the biggest to-do for their brunch.
